BBQ Chopped Salad For Dinner
Chopped Salads are great because they have so many ingredients that they can really be considered a whole meal. They consist of lettuce and protein along with many things you would usually use a side dish. A BBQ chopped salad is perfect for nights you don’t want to heat up your kitchen. Start with barbecuing 3 Chicken Breasts on a grill over medium low heat seasoned with salt, pepper, and granulated garlic. Make sure to cook it completely through, but don’t overcook or it will dry out the meat. Let meat rest for 5 minutes, for the juices to settle and for it to cool so you can cube it. Next chop romaine lettuce into fine ribbons, wash well and then let drain. Once your chicken is cool cube into bite size pieces and then mix with 2 Tablespoons of your favorite BBQ sauce (add more if it looks too dry). Put the lettuce into a salad bowl and add a half can drained corn, a half can rinsed and drained black beans, and toss. Then add chicken, sliced avocado, diced tomato, sliced red onion, cheddar cheese, and cilantro. Give it all a big toss right before serving. Serve with a side of ranch dressing. You can also top with tortilla strips.
The Ultimate Caprese Salad
A very traditional European salad, Caprese salad is a great addition to any meal. It is also a salad that can be easily grown mostly in your own garden. Start with 2 or 3 beautiful garden ripe tomatoes and slice. Use fresh mozzarella roughly the same size as your tomatoes and make equal amount of slices of cheese as there are tomato slices. Take 5 or 6 leaves of fresh basil and tear into pieces and sprinkle over tomatoes and mozzarella that has been placed in alternating fashion on a serving plate, and for added flavor add a sliced avocado. Drizzle extra virgin olive oil over the salad followed by a splash of balsamic vinegar and finish with freshly ground pepper and sea salt.
