I wasn’t always a fan of brussels sprouts, but I’ve gradually grown to like them. Even if you don’t like brussels sprouts, I’m willing to bet you’ll like these!
They’re somewhat crunchy and salty, and they’re delicious as a snack, appetiser, or side dish! I prepared these as a side dish with our pasta tonight, and my husband, kid, and I devoured the whole dish! Even Ari enjoyed these, so if you’re a parent struggling to convince your children to eat their veggies, give this recipe a try! I’d be astonished if they didn’t want seconds!
They are pretty simple to throw together. You just cut off the ends of the brussels sprouts so that you can peel off the leaves individually until you reach the leaves in the middle that are more yellow and too small to peel off. Then, drizzle them with olive oil, sprinkle them with a little salt, and bake for a few minutes…and voila! You have a nice savory treat (and you won’t even think of it as eating your vegetables!).

- One dozen brussels sprouts
- ½-1 tbsp olive oil
- ⅛- 1/4 tsp salt
- Preheat the oven to 350 degrees
- Wash the Brussels sprouts and trim the ends so you may peel away the leaves one by one until you reach the inner leaves, which are more yellow and more difficult to pull off.
- Place the leaves in a medium-sized bowl and pour with just enough olive oil to gently cover each one (approximately 12-1 tbsp) and season with salt to taste (18- 1/4 tsp).
- Toss to coat
- Lay them out individually on a large baking sheet and bake for about 10 minutes (check them frequently towards the end so that they don’t become burnt, you may have to take them out a minute early or leave them in a minute longer to reach desired “crispness”)
